Ingredients
  

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup finely chopped pecans
  • 1 cup powdered sugar (for rolling)

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  • Add the vanilla extract and mix until combined.
  • In a separate bowl, whisk together the all-purpose flour and salt. Gradually add this mixture to the butter mixture, stirring until just combined.
  • Fold in the finely chopped pecans until evenly distributed throughout the dough.
  • Scoop tablespoon-sized portions of dough and roll them into balls. Place the balls on the prepared baking sheet, spacing them about 2 inches apart.
  • Bake for 18-20 minutes, or until the edges are lightly golden but the centers remain pale.
  • Remove from the oven and allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a cooling rack.
  • Once cooled, roll the cookies in powdered sugar until fully coated. For extra sweetness, you can roll them again in powdered sugar after they've cooled completely.

Notes

These cookies can be stored in an airtight container at room temperature for up to a week.
Feel free to replace pecans with walnuts or almonds for a different flavor.
You can add a pinch of cinnamon to the dough for a warm, spicy note if desired.
