- 1 cup brown sugar packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips optional
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
In a mixing bowl, combine the peanut butter and brown sugar. Mix until well blended.
Add the egg and vanilla extract to the mixture, and stir until combined.
In a separate bowl, mix together the rolled oats, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If using, fold in the chocolate chips.
Use a spoon to drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.
