Ingredients
  

  • 1 cup peanut butter smooth or crunchy
  • 1 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup rolled oats
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper if desired.
  • In a mixing bowl, combine the peanut butter and brown sugar. Mix until well blended.
  • Add the egg and vanilla extract to the mixture, and stir until combined.
  • In a separate bowl, mix together the rolled oats, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until fully combined. If using, fold in the chocolate chips.
  • Use a spoon to drop rounded tablespoons of the cookie dough onto the prepared baking sheet, leaving space between each cookie as they will spread slightly.
  • Bake in the preheated oven for 10-12 minutes, or until the edges start to turn golden brown.
  • Remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For added texture, try mixing in chopped nuts or shredded coconut.
Store the cookies in an airtight container at room temperature for up to a week.
Feel free to adjust the sweetness by adding or reducing the sugar according to your preference.
