Ingredients
  

  • 4 slices bread Thick-cut preferred.
  • 1 ripe banana Sliced.
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/4 cup milk Dairy-free option: almond milk.
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons butter For frying.
  • maple syrup For serving, optional.

Instructions
 

  • In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  • Spread 2 tablespoons of peanut butter evenly on one side of each slice of bread. Place banana slices on top of the peanut butter. Top with another slice of bread to create a sandwich.
  • Preheat the skillet or griddle over medium heat and add 1 tablespoon of butter.
  • Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
  • Once the skillet is hot, carefully place the soaked sandwiches onto the skillet. Cook for 3-4 minutes on each side or until they are golden brown and cooked through. You may need to add more butter for the second batch.
  • Remove from the skillet and serve warm. Drizzle with maple syrup if desired.

Notes

You can use whole wheat or gluten-free bread for a healthier option.
Add toppings like chopped nuts or berries for extra flavor and nutrition.
This recipe can be easily doubled or halved according to your needs.
