1 plate
- 4 slices bread Thick-cut preferred.
- 1 ripe banana Sliced.
- 1/2 cup creamy peanut butter
- 2 large eggs
- 1/4 cup milk Dairy-free option: almond milk.
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 2 tablespoons butter For frying.
- maple syrup For serving, optional.
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
Spread 2 tablespoons of peanut butter evenly on one side of each slice of bread. Place banana slices on top of the peanut butter. Top with another slice of bread to create a sandwich.
Preheat the skillet or griddle over medium heat and add 1 tablespoon of butter.
Dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side.
Once the skillet is hot, carefully place the soaked sandwiches onto the skillet. Cook for 3-4 minutes on each side or until they are golden brown and cooked through. You may need to add more butter for the second batch.
Remove from the skillet and serve warm. Drizzle with maple syrup if desired.
You can use whole wheat or gluten-free bread for a healthier option.
Add toppings like chopped nuts or berries for extra flavor and nutrition.
