Ingredients
  

  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cup unsalted butter Softened.
  • 2 large eggs
  • 0.5 cup buttermilk
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 cup pureed ripe peaches Fresh or canned.
  • 1 cup unsalted butter Softened, for frosting.
  • 4 cups powdered sugar
  • 0.25 cup champagne or sparkling wine
  • 1 teaspoon vanilla extract
  • a pinch salt

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  • Add in the eggs, buttermilk, and vanilla extract. Mix until well combined.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing just until combined. Fold in the pureed peaches.
  • Divide the batter evenly among the cupcake liners, filling each about 2/3 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  • Allow the cupcakes to cool in the pan for 5 minutes, then transfer them to a cooling rack to cool completely.
  • While the cupcakes are cooling, prepare the champagne frosting. In a mixing bowl, beat the softened butter until creamy.
  • Gradually add in the powdered sugar, champagne, vanilla extract, and a pinch of salt. Beat until fluffy and smooth.
  • Once the cupcakes are completely cool, frost them using a piping bag or a spatula with the champagne frosting.
  • Optional: Garnish with peach slices or edible glitter for a festive touch.

Ensure the peaches are ripe for the best flavor in the cupcakes.
Adjust the amount of champagne in the frosting according to your preference for sweetness and flavor intensity.
