1 large skillet
1 wooden spoon
4 serving plates
- 12 oz pasta (such as penne or spaghetti)
- 4 cups fresh spinach, washed and chopped
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon red pepper flakes optional
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup vegetable broth or pasta cooking water
- 1/4 cup grated Parmesan cheese optional, for serving
- lemon wedges for serving, optional
Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/4 cup of the pasta water, then drain the pasta in a colander.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant.
Add the chopped spinach to the skillet and sauté for 3-4 minutes, until wilted. If using, add the red pepper flakes, salt, and black pepper.
Pour the reserved pasta water or vegetable broth into the skillet and stir to combine.
Add the drained pasta to the skillet and toss everything gently until the pasta is well coated with the spinach and garlic mixture.
Adjust seasoning to taste and cook for an additional 1-2 minutes to heat through.
Serve immediately, topped with grated Parmesan cheese and lemon wedges if desired.
For a heartier meal, you can add grilled chicken or shrimp.
Feel free to substitute the spinach with other greens like kale or arugula.
Adjust the amount of garlic and red pepper flakes based on your flavor preference.
This dish can be served warm or at room temperature, making it great for meal prep or leftovers.
