Ingredients
  

  • 8 ounces pasta such as penne or fusilli.
  • 1 can tuna in water 5 ounces, drained.
  • 1 cup cherry tomatoes halved.
  • 1/2 cup cucumber diced.
  • 1/4 cup red onion finely chopped.
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • optional fresh parsley chopped, for garnish.

Instructions
 

  • Bring a medium pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain the pasta in a colander and rinse under cold water to stop the cooking process.
  • In a large mixing bowl, combine the drained tuna, cherry tomatoes, cucumber, and red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create a dressing.
  • Add the cooked pasta to the mixing bowl with the tuna and vegetables. Pour the dressing over the salad and gently toss to combine all the ingredients evenly.
  • Taste and adjust seasoning if necessary. Garnish with fresh parsley if desired.
  • Serve immediately or refrigerate for 30 minutes to allow the flavors to meld before serving.

Notes

You can customize this salad by adding other ingredients such as bell peppers, olives, or capers.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
