Ingredients
  

  • 12 oz fettuccine pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • to taste Salt
  • to taste Black pepper
  • ¼ cup fresh parsley, chopped for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta in a colander.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 2 minutes, until fragrant, being careful not to burn it.
  • Pour the heavy cream into the skillet with the garlic and bring to a gentle simmer. Allow it to cook for about 3 minutes while stirring frequently.
  • Gradually stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, add a little of the reserved pasta water to reach your desired consistency.
  • Season the sauce with salt and black pepper to taste.
  • Add the cooked fettuccine to the skillet and toss to coat the pasta evenly with the sauce. Cook for an additional 2 minutes to warm the pasta through.
  • Serve the pasta hot, garnished with chopped fresh parsley.

Notes

For extra flavor, consider adding sautéed mushrooms or grilled chicken to the pasta.
This dish pairs well with a side salad or garlic bread.
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat gently on the stove or in the microwave.
