Ingredients
  

  • 8 ounces pasta any shape
  • 12 ounces kielbasa sausage sliced
  • 1 tablespoon olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper bell pepper chopped
  • 1 cup broccoli florets
  • 1 can (14.5 ounces) diced tomatoes undrained
  • 1 teaspoon Italian seasoning
  • to taste salt
  • to taste pepper
  • optional grated Parmesan cheese for serving

Instructions
 

  • Begin by cooking the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.
  • While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  • Add the sliced kielbasa to the skillet and cook until browned, about 5 minutes.
  • Stir in the chopped onion and garlic, and sauté until the onion is translucent, about 3 minutes.
  • Add the chopped bell pepper and broccoli florets. Cook for another 3-4 minutes, until the vegetables are tender.
  • Pour in the can of diced tomatoes (with juice) and add Italian seasoning. Stir to combine, and let simmer for about 5 minutes.
  • Mix in the cooked pasta, and toss everything together. Season with salt and pepper to taste.
  • Serve hot, sprinkled with grated Parmesan cheese if desired.

Notes

Feel free to substitute the kielbasa with any smoked sausage or turkey kielbasa for a lighter option.
Add other vegetables according to your preference, such as zucchini or spinach.
For a spicy kick, consider adding red pepper flakes to the dish.
