- 12 oz pasta (penne or fusilli)
- 2 cups water or broth
- 1 cup marinara sauce Can substitute with any pasta sauce of your choice.
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp red pepper flakes (optional)
- 1 cup shredded mozzarella cheese
- to taste salt and pepper
- fresh basil leaves for garnish (optional)
Start by turning the Instant Pot to the sauté function. Add a splash of oil and heat for about a minute.
Add the diced onion to the pot and sauté for about 2-3 minutes until translucent.
Stir in the minced garlic and cook for another 30 seconds until fragrant.
Add the pasta, water or broth, marinara sauce, oregano, basil, red pepper flakes (if using), and season with salt and pepper. Stir to combine all ingredients well.
Close the lid of the Instant Pot and ensure the valve is set to the sealing position.
Select the manual or pressure cook function and set the timer for 8 minutes.
Once the cooking time is complete, allow for a quick release by carefully turning the valve to venting.
Once the pressure has fully released, open the pot and stir in the shredded mozzarella cheese until melted and well combined.
Serve immediately, garnished with fresh basil leaves if desired.
Feel free to add in cooked vegetables like spinach or zucchini for an extra nutritional boost.
You can substitute the marinara sauce with any pasta sauce of your choice.
