Ingredients
  

  • 1 pound pasta your choice: penne, rotini, or bow tie
  • 4 cups chicken or vegetable broth
  • 1 can diced tomatoes 14.5oz/410g, undrained
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups fresh spinach chopped
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste pepper

Instructions
 

  • Begin by preparing your crockpot. Spray it with a bit of non-stick spray for easier cleanup if desired.
  • In the crockpot, combine the pasta, chicken or vegetable broth, diced tomatoes, heavy cream, Italian seasoning, garlic powder, salt, and pepper. Stir together until the pasta is mostly submerged in the liquid.
  • Cover the crockpot with the lid and cook on low for 4 hours.
  • After 4 hours, check the pasta for doneness. If it's cooked through, add the chopped spinach and Parmesan cheese, stirring until the cheese is melted and the spinach is wilted.
  • Taste and adjust seasonings as needed before serving.

Notes

You can add cooked chicken or ground beef for added protein if desired.
To prevent overcooking, check the pasta a bit earlier, especially if using a different type of pasta or if you prefer a firmer texture.
