Start by prepping your chicken in the pressure cooker if it isn’t cooked already. Add a little water, pop on the sealing ring, lock the lid, and let it pressurize. The valve hiss tells you it’s working.
Once the pressure build is complete, use the quick release method to bring the pressure down fast. Take out the chicken and shred or cut it into bite-sized pieces.
Cook your bacon in a pan until crispy, then crumble it up. Set aside.
Hard boil your eggs and peel them, then slice in half. If you’re pressed for time, grab pre-cooked ones from the store, works real good too.
Chop your romaine lettuce into bite-sized pieces so every forkful gets good crunch.
In a big bowl, combine romaine, shredded chicken, crumbled bacon, avocado cubes, halved tomatoes, and eggs.
Add the quick pickled red onions and drizzle that good green goddess dressing over the top. Season lightly with kosher salt and black pepper.
Toss gently to mix everything nice and evenly. Serve right away or chill a bit if you like it cooler.
