- 2 tablespoons olive oil
- 1 small onion diced
- 2 cloves garlic minced
- 8 ounces mushrooms sliced
- 4 cups fresh spinach
- 1 cup vegetable or chicken broth
- 1 cup heavy cream can substitute with half-and-half for a lighter sauce
- ½ cup grated Parmesan cheese

In a large pot, bring salted water to a boil. Add the orzo and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are soft and browned, about 5-7 minutes.
Stir in the fresh spinach and cook until wilted, about 2 minutes.
Pour in the vegetable or chicken broth and bring to a simmer. Stir in the heavy cream and let it cook for another 3-4 minutes, allowing it to thicken slightly.
Add the cooked orzo to the skillet and mix well to combine. Stir in the grated Parmesan cheese. Season with salt and pepper to taste.

You can substitute heavy cream with half-and-half if you prefer a lighter sauce.
