Pour the mixture into a shallow dish, large enough to fit a slice of bread.
Heat a non-stick skillet or griddle over medium heat and grease it lightly with butter.
Dip each slice of bread into the egg mixture, allowing it to soak for about 20 seconds per side. Ensure it is well-coated but not overly soggy.
Place the soaked bread slices on the skillet, cooking them for about 3-4 minutes per side until golden brown.
During the last minute of cooking, sprinkle a few chopped pecans on top of the bread in the skillet to toast them slightly.
Once cooked, remove the French toast from the skillet and keep warm. Repeat the process with the remaining slices of bread.
Serve warm, drizzled with maple syrup and sprinkle with powdered sugar if desired.
