- 2/3 cup Mayonnaise plus extra for after refrigeration if you want it creamier
- 2 tablespoons Fresh lemon juice
- 1/2 teaspoon Salt
- 1 tablespoon Sugar
- 4 cups Grated carrots
- 1 (20-ounce) can Crushed pineapple well-drained
- 1 cup Raisins
- 1 cup Pecans coarsely chopped
- 1 tablespoon Fresh parsley minced
Instructions
First, grab a large mixing bowl and combine mayonnaise, lemon juice, salt, and sugar. Stir until smooth and the sugar dissolves.
Next, add grated carrots, crushed pineapple, raisins, and pecans to the bowl. Mix to coat every bit.
Taste your salad. Add more mayonnaise if needed for a richer touch.
Cover the bowl tightly with plastic wrap or lid and chill in the fridge.
Refrigerate for at least 1 hour. Before serving, toss gently and sprinkle parsley on top.

Plump The Raisins: warm up the pineapple juice and let them soak in it until they plump up a bit.
