Ingredients

  • 3/4 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or grease it lightly.
  • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer or a whisk until light and fluffy.
  • Add the egg and vanilla extract to the butter mixture, and mix until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the rolled oats and chocolate chips until evenly distributed.
  • Using a cookie scoop or spoon, drop rounded tablespoons of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10 to 12 minutes or until the edges are lightly golden.
  • Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a cooling rack to cool completely.

Notes

For a fun variation, you can add nuts or dried fruit to the cookie dough.
Store the cookies in an airtight container at room temperature for up to one week.
