Instructions
Start with potatoes – peel and dice ‘em into bite-sized cubes while your large pot of salted water heats.
Place potatoes in pressure cooker if you wanna stick with the cooker, add just enough water to cover, seal the lid, make sure the sealing ring is set up right.
Set pressure and bring it to pressure build, then cook for about 5 minutes on high pressure.
Quick release the pressure so potatoes don’t turn mushy, then drain and lay ‘em out to cool to room temperature in a big mixing bowl.
Hard boil the egg in a separate pot for about 10-12 minutes then peel and chop that up nice and fine.
Mix up dressing – combine sour cream, mayo, pickle relish, salt, and black pepper in a separate bowl. Then add cooled potatoes, chopped egg, scallions, bell pepper, celery and gently stir until everything’s just coated.
Notes
Serve this classic potato salad chilled for your next family picnic or dinner.
