- 1 can (15 oz) black beans rinsed and drained
- 1/2 cup corn canned or frozen
- 1/2 cup breadcrumbs
- 1/4 cup bell pepper finely chopped
- 1/4 cup onion finely chopped
- 2 cloves garlic minced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil for cooking
- 4 pieces burger buns
- variable pieces optional toppings avocado, lettuce, tomato, salsa, cheese
In a large mixing bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.
Add the corn, breadcrumbs, bell pepper, onion, garlic, chili powder, cumin, salt, and black pepper to the mashed beans. Mix well until all ingredients are combined.
Divide the mixture into 4 equal portions and shape each portion into a patty.
Heat olive oil in a skillet over medium heat. Once hot, add the burger patties to the skillet.
Cook the patties for about 5-7 minutes on each side, until they are golden brown and heated through.
Toast the burger buns if desired, then assemble the burgers by placing a patty on each bun and adding your favorite toppings.
You can customize the spices and vegetables to suit your taste.
If you want a spicier burger, consider adding diced jalapeƱos to the mixture.
These burgers can be stored in the refrigerator for up to 3 days or frozen for later use.
