  • 1 cup mascarpone cheese

  • Begin by preparing the dates. Carefully slice each Medjool date lengthwise without cutting all the way through, allowing for easy stuffing.
  • In a mixing bowl, combine the mascarpone cheese and a pinch of salt. Stir until smooth and creamy.
  • Using a spoon or spatula, stuff each date with the mascarpone mixture generously.
  • Sprinkle pomegranate seeds into each stuffed date, pressing slightly to secure them in place.
  • Arrange the stuffed dates on a baking sheet or serving platter.
  • Drizzle honey over the stuffed dates just before serving for an added touch of sweetness.
  • If desired, sprinkle chopped nuts over the top for extra texture and flavor.

Notes

Feel free to adjust the amount of honey based on your desired level of sweetness.
These stuffed dates can be prepared ahead of time and refrigerated until serving, but drizzle with honey just before serving for the best flavor.
