- 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
- to taste salt
- to taste pepper
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 cup sun-dried tomatoes in oil, drained and chopped
- 1 cup chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- to garnish fresh basil Optional.
Season the chicken breasts on both sides with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
Pour in the chicken broth and bring to a simmer. Let it cook for about 3-4 minutes to reduce slightly.
Lower the heat and stir in the heavy cream, Parmesan cheese, dried basil, and oregano. Whisk until the cheese is melted and the sauce is smooth.
Return the chicken to the skillet, coating it in the creamy sauce. Simmer for another 5 minutes to heat through.
Serve the chicken topped with the sauce and garnish with fresh basil if desired.
Feel free to serve this dish with pasta, rice, or a side of vegetables for a complete meal.
You can also substitute the chicken breasts with chicken thighs for a juicier option.
Make sure to adjust the seasoning based on your taste preferences.
