Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs.
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup sun-dried tomatoes in oil, drained and chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to garnish fresh basil Optional.

Instructions
 

  • Season the chicken breasts on both sides with salt and pepper.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-6 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant.
  • Pour in the chicken broth and bring to a simmer. Let it cook for about 3-4 minutes to reduce slightly.
  • Lower the heat and stir in the heavy cream, Parmesan cheese, dried basil, and oregano. Whisk until the cheese is melted and the sauce is smooth.
  • Return the chicken to the skillet, coating it in the creamy sauce. Simmer for another 5 minutes to heat through.
  • Serve the chicken topped with the sauce and garnish with fresh basil if desired.

Notes

Feel free to serve this dish with pasta, rice, or a side of vegetables for a complete meal.
You can also substitute the chicken breasts with chicken thighs for a juicier option.
