Bring a large pot of salted water to a boil. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.
In a skillet over medium heat, heat olive oil. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are cooked through and no longer pink in the center. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.
In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream and chicken broth, stirring to combine. Add the sun-dried tomatoes and bring the mixture to a simmer.
Once the sauce has thickened slightly, stir in the grated Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
Add the cooked pasta to the skillet, tossing to coat the pasta in the creamy sauce. Then, add the sliced chicken on top and gently mix to combine.
Plate the pasta and chicken, garnishing with fresh basil leaves if desired.
