- 1 ripe mango, diced
- 1 cup fresh pineapple, diced
- 1/2 medium red onion, finely chopped
- 1 small jalapeño, seeds removed and finely chopped Remove seeds for less heat.
- 1/4 cup fresh cilantro, chopped

Start by preparing the mango and pineapple. Peel and dice the mango into small cubes, and do the same for the fresh pineapple. Place both in a mixing bowl.
Finely chop the red onion and add it to the bowl with the mango and pineapple.
Carefully chop the jalapeño, removing the seeds for less heat, and add it to the mixture in the bowl.
Chop the fresh cilantro and add it to the bowl as well.
Squeeze the juice of one lime over the mixture and add salt to taste.
Gently fold the ingredients together until well mixed. Be careful not to mash the fruit.
Let the salsa sit for about 10 minutes to allow the flavors to meld before serving.
This salsa can be stored in an airtight container in the refrigerator for up to 2 days.
For more spice, keep some of the jalapeño seeds or add a dash of hot sauce.
Serve with grilled seafood or chicken, or as a topping for tacos. Enjoy!
