1 9x13 inch baking dish
1 mixing spoon
1 refrigerator
1 serving dish
- 4 cups fresh blueberries Can substitute with frozen blueberries; ensure thawed and drained.
- 1 cup granulated sugar
- 3 tablespoons cornstarch
- 1 teaspoon lemon juice
- 1/2 teaspoon cinnamon Consider adding a pinch of nutmeg for added flavor.
- 8 oz cream cheese Softened.
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups whipped topping Such as Cool Whip.
In a medium saucepan, combine the fresh blueberries, granulated sugar, cornstarch, lemon juice, and cinnamon. Cook over medium heat, stirring frequently until the blueberries start to burst and the mixture thickens (about 10-15 minutes). Remove from heat and let it cool.
In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the powdered sugar and vanilla extract, mixing until well combined and creamy.
Fold in 1 cup of whipped topping into the cream cheese mixture until evenly combined.
In a 9x13 inch baking dish, spread a layer of the blueberry mixture on the bottom.
Spoon the cream cheese mixture over the blueberry layer and spread it evenly.
Top with the remaining blueberry mixture, spreading it gently to cover the cream cheese layer.
Dollop the rest of the whipped topping on top of the final blueberry layer and spread gently to create an even top.
Cover the dish with plastic wrap and refrigerate for at least 2 hours before serving to let the layers set.
You can substitute fresh blueberries with frozen blueberries; just ensure they are thawed and drained well.
For added flavor, consider adding a pinch of nutmeg to the blueberry filling.
