- 1 pound cooked lobster meat, chopped Chopped into bite-sized pieces.
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup celery, finely chopped
- 1 tablespoon fresh chives, chopped Optional.

- 4 New England-style hot dog buns
- 2 tablespoons unsalted butter For spreading on buns.
Begin by bringing a large pot of salted water to a boil. If your lobster is not already cooked, add the lobster and boil for approximately 5-7 minutes until the lobster meat is opaque. Drain and let cool.
Chop the cooked lobster meat into bite-sized pieces and place them in a mixing bowl.
In the mixing bowl, add the mayonnaise, Dijon mustard, lemon juice, chopped celery, and chives (if using). Mix everything together until the lobster is evenly coated. Season with salt and pepper to taste.
Preheat your grill or skillet over medium heat.
Spread butter on the outside of each hot dog bun. Grill or toast the buns for about 2-3 minutes on each side, or until golden brown and crispy.
Once the buns are toasted, fill each bun generously with the lobster mixture.
Serve immediately, garnished with additional chives if desired.
For an added kick, you can mix in a dash of hot sauce to the lobster mixture.
Feel free to use fresh lobster meat if you have access to it, as it will enhance the flavor.
These rolls can also be served cold; simply chill the lobster mixture in the refrigerator for an hour before serving.
