Ingredients
  

  • 1 cup Arborio rice
  • 4 cups seafood stock Keep warm during cooking.
  • 2 lobsters About 1.5 to 2 pounds each.
  • 1 small onion, finely chopped About 100g.
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine About 120ml.
  • 1/2 cup grated Parmesan cheese About 50g.
  • 3 tablespoons unsalted butter Total of 45g.
  • 2 tablespoons olive oil About 30ml.
  • Salt To taste.
  • Black pepper To taste.
  • Fresh parsley, chopped For garnish.

Instructions
 

  • Fill a large pot with water, bring it to a boil, and add the lobsters. Boil for about 8-10 minutes, then remove and let them cool. After cooling, crack the shells, and extract the meat; chop into bite-sized pieces and set aside.
  • In a separate saucepan, heat the seafood stock over low heat and keep it warm.
  • In a large saucepan, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  • Stir in the minced garlic and Arborio rice. Cook for an additional 2-3 minutes, stirring frequently until the rice is lightly toasted.
  • Pour in the white wine and let it simmer, stirring constantly until the wine is mostly absorbed by the rice.
  • Begin adding the warm seafood stock, one ladleful at a time, stirring continuously. Wait until the liquid is almost fully absorbed before adding the next ladleful. This process should take around 20 minutes until the rice is creamy and al dente.
  • Once the rice has reached the desired texture, gently fold in the lobster meat, remaining butter, and grated Parmesan cheese. Season with salt and pepper to taste.
  • Remove from heat and let it sit for a minute. Serve immediately, garnished with fresh parsley.

Notes

You can use frozen lobster if fresh isn’t available; just ensure it is cooked properly.
For a creamier texture, you can add a splash of heavy cream before serving.
The risotto can be made vegetarian by using vegetable stock and omitting the lobster, substituting it with mushrooms or asparagus.
