Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup cold butter, cubed
  • 1/2 cup lemonade
  • 1 each egg, beaten For egg wash, optional.

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  • Add the cold, cubed butter to the flour mixture. Using your fingers or a pastry cutter, blend until the mixture resembles coarse crumbs.
  • Pour in the lemonade and gently mix with a spoon until the dough comes together. Do not overmix.
  • Turn the dough out onto a lightly floured surface. Pat it into a circle about 1 inch thick.
  • Use a dough cutter or knife to cut the dough into wedges or rounds, depending on your preference.
  • Place the scones on the prepared baking sheet. If desired, brush the tops with the beaten egg for a golden finish.
  • Bake in the preheated oven for about 15 minutes or until the scones are lightly golden.
  • Remove from the oven and allow to cool slightly before serving. Garnish with lemon zest if desired.

Notes

Serve the scones warm or at room temperature. They pair beautifully with clotted cream or lemon curd.
For a sweeter scone, feel free to add chocolate chips or dried fruit to the dough.
Store any leftovers in an airtight container at room temperature for up to 2 days. For longer freshness, freeze them and reheat when needed.
