In a mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, salt, and black pepper. Whisk until well blended.
Add the chicken pieces to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes to allow the flavors to develop (you can marinate for up to 2 hours).
Preheat your grill or grill pan over medium-high heat.
