Heat the olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté for about 5 minutes, or until the vegetables are softened.
Add the minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.
Pour in the chicken broth and bring to a boil.
Once boiling, add the diced turkey, frozen peas, corn, thyme, rosemary, and salt and pepper to taste. Reduce heat and let it simmer for about 20 minutes.
If using egg noodles, add them to the soup in the last 10 minutes of cooking. Stir occasionally to prevent them from sticking.
Taste and adjust seasoning if needed.
Serve hot, garnished with fresh parsley.
