Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or beef broth
  • 2 cups water
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp red pepper flakes (optional)
  • to taste salt
  • to taste pepper
  • 8 oz broken lasagna noodles
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • to taste fresh basil for garnish (optional)

Instructions
 

  • In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground beef or Italian sausage and cook until browned, breaking it apart with a wooden spoon.
  • Add the diced onion to the pot and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant.
  • Pour in the crushed tomatoes, chicken or beef broth, and water. Stir in the oregano, basil, red pepper flakes (if using), salt, and pepper. Bring the mixture to a boil.
  • Once boiling, add the broken lasagna noodles. Reduce heat to a simmer and cook for about 10-12 minutes, or until the noodles are tender.
  • In a separate bowl, mix the ricotta cheese with a pinch of salt and set aside.
  • Once the noodles are cooked, remove the pot from heat and stir in the mozzarella and Parmesan cheeses until melted.
  • Serve the soup in bowls, adding a dollop of the ricotta cheese mixture on top. Garnish with fresh basil if desired.

Notes

This soup can be made ahead of time and stored in the refrigerator for up to 3 days or frozen for up to 2 months.
For a vegetarian version, substitute the meat with mushrooms or lentils.
Adjust the thickness of the soup by adding more or less broth or water, depending on your preference.
