Ingredients
  

  • 1 pound kielbasa sausage, sliced
  • 4 medium potatoes, diced (about 2 pounds)
  • 1 large onion, chopped
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • to taste salt
  • to taste black pepper
  • for garnish optional fresh parsley, chopped

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chopped onion and cook for about 5 minutes until it becomes translucent.
  • Stir in the minced garlic and cook for an additional 1 minute.
  • Add the sliced kielbasa to the skillet. Cook for about 5-7 minutes until browned, stirring occasionally.
  • Incorporate the diced potatoes, paprika, dried thyme, salt, and pepper into the skillet. Mix well.
  • Cover the skillet and reduce the heat to low. Cook for about 20-25 minutes, stirring occasionally, until the potatoes are fork-tender.
  • Taste and adjust seasoning if necessary.
  • Remove from heat and garnish with chopped parsley if desired. Serve hot.

Notes

Feel free to add other vegetables like bell peppers or carrots for extra flavor and nutrition.
This dish can be prepared ahead of time and warmed up later.
