In a large mixing bowl, combine vegetable oil, soy sauce, lime juice, brown sugar, grated ginger, minced garlic, chopped Scotch bonnet peppers, allspice, thyme, cinnamon, salt, black pepper, and green onions. Mix well to create the marinade.
Add the chicken thighs to the marinade, ensuring they are well-coated. Cover the bowl with plastic wrap or place the chicken in a zip-top bag. Marinate in the refrigerator for at least 2 hours, preferably overnight for maximum flavor.
Preheat the grill or grill pan over medium-high heat.
Remove the chicken from the marinade, letting any excess drip off. Discard the remaining marinade.
Place the chicken skin side down on the grill. Close the lid and cook for about 15-20 minutes, or until the skin is crispy and golden brown.
Flip the chicken and cook for an additional 10-15 minutes, or until the internal temperature reaches 165°F (75°C).
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before serving.
