Ingredients
  

  • 6 large jalapeño peppers, diced Seeds removed for less heat if desired.
  • 1 lb ground beef
  • 1 cup cooked bacon, crumbled
  • 1 cup cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 2 cups cooked rice Can use white or brown rice.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • to taste salt and pepper
  • 1/2 cup Panko breadcrumbs Optional for topping.
  • fresh cilantro for garnish Optional.

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the diced jalapeños, ground beef, cooked bacon, cream cheese, and half of the shredded cheeses (cheddar and Monterey Jack). Stir until well blended.
  • Add the cooked rice, garlic powder, onion powder, smoked paprika, and season with salt and pepper. Mix until all ingredients are evenly combined.
  • Transfer the mixture into a greased 9x13-inch baking dish, spreading it evenly.
  • Top the casserole with the remaining shredded cheeses and Panko breadcrumbs if using.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the top is golden brown.
  • Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro if desired.

Notes

You can adjust the number of jalapeños based on your heat preference.
For a vegetarian option, substitute ground beef with black beans or another suitable meat alternative.
This casserole can be made ahead of time and stored in the refrigerator before baking. Just extend the baking time if coming from the fridge.
Serve with sour cream or Greek yogurt on the side for added creaminess. Enjoy!
