- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 jalapeño pepper seeded and finely chopped
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 4 cups vegetable broth
- 2 15-ounce cans hominy, drained and rinsed
- 2 medium zucchini, diced
- 1 cup frozen corn
- 1 cup fresh spinach, roughly chopped

Set the Instant Pot to the sauté function and heat the olive oil.
Add the diced onion and cook for about 3 minutes until translucent.
Stir in the minced garlic, chopped jalapeño, cumin, oregano, and chili powder. Cook for an additional 1-2 minutes until fragrant.
Pour in the vegetable broth and scrape the bottom of the pot to release any stuck bits.
Add the hominy, diced zucchini, and frozen corn to the pot. Stir well.
Close the Instant Pot lid and set the valve to the sealing position. Select the manual setting and cook on high pressure for 10 minutes.
Once the cooking is complete, let the pressure release naturally for 10 minutes, then do a quick release to release any remaining pressure.
Open the lid and stir in the chopped spinach. Season with salt and pepper to taste.
Serve hot, garnished with fresh cilantro and lime wedges on the side.
Feel free to adjust the spice level by adding more or fewer jalapeños according to your preference.
For a heartier dish, you can add beans such as black beans or pinto beans.
