Ingredients
  

  • 4 cups fresh broccoli florets
  • 1 tablespoon vegetable oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup bell peppers, diced (red or green)
  • 1/4 cup unsalted roasted peanuts
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon sugar
  • 1 teaspoon chili paste (adjust to taste)
  • 1/2 cup vegetable broth
  • to taste salt
  • to taste pepper
  • 2 tablespoons sliced green onions for garnish

Instructions
 

  • Prepare all ingredients by washing the broccoli and chopping the onions, garlic, ginger, and bell peppers. Set aside.
  • Set the Instant Pot to “Sauté” mode and heat the vegetable oil. Once hot, add the diced onion and sauté until translucent, about 3 minutes.
  • Add the minced garlic and ginger, and cook for another 1 minute until fragrant.
  • Stir in the bell peppers and sauté for another 2 minutes.
  • In a mixing bowl, combine soy sauce, rice vinegar, hoisin sauce, sugar, chili paste, and vegetable broth. Mix well.
  • Add the broccoli florets and the sauce mixture into the Instant Pot. Gently stir to combine everything.
  • Close the lid of the Instant Pot, ensuring the valve is in the sealing position. Set to “Manual” or “Pressure Cook” mode at high pressure for 3 minutes.
  • Once done, carefully perform a quick release of the pressure.
  • Open the lid and give everything a good stir. Add roasted peanuts and season with salt and pepper to taste.
  • Serve hot, garnished with sliced green onions.

Notes

Adjust the amount of chili paste based on your spice preference.
You can substitute the broccoli with other vegetables like cauliflower or snap peas for variety.
This dish pairs well with steamed rice or noodles for a complete meal.
