Turn the Instant Pot to the 'Sauté' setting. Once hot, add the olive oil, diced onion, and minced garlic. Sauté for about 2-3 minutes until the onion is translucent.
Add sliced carrots and celery to the pot. Continue to sauté for another 3 minutes.
Stir in dried thyme, dried parsley, salt, and black pepper. Mix well.
Pour in the chicken broth and add the boneless chicken breasts.
Close the lid of the Instant Pot, ensuring the valve is in the sealing position. Set it to 'Manual' or 'Pressure Cook' on high pressure for 8 minutes.
Once the cooking time is complete, allow the pot to naturally release pressure for 5 minutes, then carefully switch the valve to 'venting' to release any remaining steam.
Open the lid and remove the cooked chicken breasts. Shred the chicken using two forks or chop it into bite-sized pieces.
Return the shredded chicken to the pot and add the egg noodles. Set the Instant Pot to 'Sauté' again and cook for an additional 5 minutes, until the noodles are tender, stirring occasionally.
In the last minute of cooking, stir in the frozen peas and mix until heated through.
