- 4 cups unsweetened soy milk
- 1/4 cup unsweetened plain soy yogurt with live cultures

Pour the 4 cups of unsweetened soy milk into the Instant Pot.
Turn on the Instant Pot and set it to the 'Sauté' function until the soy milk reaches about 180°F (82°C).
Once the milk is heated, turn off the Instant Pot and let the soy milk cool down to about 110°F (43°C).
In a separate bowl, whisk together the 1/4 cup of plain soy yogurt with a little bit of the cooled soy milk (about 1/2 cup) until smooth.
Add the yogurt mixture back into the pot of cooled soy milk and gently whisk to combine thoroughly.
Seal the Instant Pot lid and set it to the 'Yogurt' function. Adjust the time to 8 hours for fermentation.
After 8 hours, the yogurt should be set and slightly thickened. Transfer it to containers and refrigerate for at least 2 hours to chill and thicken further.
Optional: Sweeten to taste before serving or enjoy it plain. You can also mix in fruits, honey, or other flavors if desired.
Ensure that the soy yogurt you use contains live active cultures for successful fermentation.
The length of fermentation can be adjusted based on your preference for tartness; longer times will result in tangier yogurt.
Homemade soy yogurt can be stored in the refrigerator for up to one week.
