In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
Add the minced garlic to the skillet and cook for an additional minute, stirring constantly.
Increase the heat to medium-high and add the ground beef. Brown the meat, breaking it apart with a spoon, until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
Stir in the sliced mushrooms and cook for about 5 minutes until they are softened.
Sprinkle the flour over the mixture and stir well to combine. Cook for about 1 minute to remove the raw flour taste.
Gradually add the beef broth while stirring, followed by the Worcestershire sauce. Bring the mixture to a simmer and let it thicken for about 3-4 minutes.
Reduce the heat to low and stir in the sour cream. Season with salt and pepper to taste, cooking just until heated through (do not boil).
Meanwhile, cook the egg noodles according to package instructions in a separate pot. Drain and set aside.
Serve the ground beef stroganoff over the egg noodles and garnish with fresh parsley.
