Ingredients
  

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream Can substitute Greek yogurt for a healthier option.

  • 8 ounces egg noodles
  • 2 tablespoons olive oil
  • for garnish fresh parsley, chopped

Instructions
 

  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes.
  • Add the minced garlic to the skillet and cook for an additional minute, stirring constantly.
  • Increase the heat to medium-high and add the ground beef. Brown the meat, breaking it apart with a spoon, until fully cooked, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the sliced mushrooms and cook for about 5 minutes until they are softened.
  • Sprinkle the flour over the mixture and stir well to combine. Cook for about 1 minute to remove the raw flour taste.
  • Gradually add the beef broth while stirring, followed by the Worcestershire sauce. Bring the mixture to a simmer and let it thicken for about 3-4 minutes.
  • Reduce the heat to low and stir in the sour cream. Season with salt and pepper to taste, cooking just until heated through (do not boil).
  • Meanwhile, cook the egg noodles according to package instructions in a separate pot. Drain and set aside.
  • Serve the ground beef stroganoff over the egg noodles and garnish with fresh parsley.

Notes

For a healthier option, you can substitute Greek yogurt for sour cream.
Feel free to add other vegetables like bell peppers or peas for additional flavor and nutrition.
