Ingredients
  

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 cup sour cream
  • 2 tablespoons all-purpose flour
  • 8 oz egg noodles
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish Optional

Instructions
 

  • Bring a pot of water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onions and cook for about 3 minutes, or until translucent.
  • Add the minced garlic and sliced mushrooms to the skillet. Cook for an additional 5 minutes until the mushrooms are tender.
  • Increase the heat to medium-high and add the ground beef to the skillet. Season with salt and pepper. Cook until the beef is browned and cooked through, about 5-7 minutes.
  • Sprinkle the flour over the beef mixture, stirring to combine. Slowly stir in the beef broth, Worcestershire sauce, and Dijon mustard. Bring the mixture to a simmer and let it cook for 2-3 minutes until it thickens slightly.
  • Reduce the heat to low and stir in the sour cream until fully incorporated. Allow the sauce to heat through, but do not bring it to a boil.
  • Combine the cooked egg noodles with the beef stroganoff sauce in the skillet. Toss to coat the noodles evenly.
  • Serve the stroganoff hot, garnishing with fresh parsley if desired.

Notes

For a lighter version, you can substitute ground turkey for ground beef.
Feel free to add other vegetables like bell peppers or peas for extra nutrition.
This dish can be prepared ahead of time and reheated; it also freezes well for meal prep.
