Ingredients
  

  • 1 pound ground beef
  • 1 cup long-grain rice
  • 2 cups beef broth
  • 1 medium onion, diced
  • 1 bell pepper, diced any color
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas and carrots optional
  • 2 tablespoons olive oil
  • chopped parsley for garnish optional

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add the diced onion and bell pepper. Sauté for 3-4 minutes until the vegetables are tender.
  • Add the minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  • Increase the heat to medium-high and add the ground beef. Cook, breaking it up with a wooden spoon until browned, about 5-7 minutes. Drain excess fat if necessary.
  • Stir in the paprika, dried oregano, salt, and black pepper, mixing well to combine.
  • Add the rice to the skillet, stirring to coat it in the beef mixture.
  • Pour in the beef broth and bring to a boil. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes or until the rice is tender and has absorbed the liquid.
  • If using, add the frozen peas and carrots during the last 5 minutes of cooking, stirring to combine.
  • Once the rice is cooked, remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork before serving.
  • Garnish with chopped parsley if desired and serve warm.

Notes

For added flavor, you can include additional spices such as cayenne pepper for heat or Italian seasoning.
This dish can be customized by adding other vegetables like corn or green beans.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on a stovetop with a splash of water to avoid drying out.
