Ingredients
  

  • 1 pound large shrimp (16-20 count) peeled and deveined
  • 1/4 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • to taste freshly ground black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)
  • as needed lemon wedges for serving

Instructions
 

  • In a large bowl, whisk together the olive oil, lemon juice, minced garlic, smoked paprika, salt, and black pepper until well combined.
  • Add the shrimp to the bowl and toss to coat each shrimp in the marinade. Cover and let marinate in the refrigerator for at least 15 minutes.
  • Preheat your grill to medium-high heat (about 375-400°F).
  • Thread the marinated shrimp onto skewers (about 4-5 shrimp per skewer). Discard excess marinade.
  • Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque, with an internal temperature of 120°F.
  • Remove the skewers from the grill and sprinkle with chopped parsley. Serve with lemon wedges on the side.

Notes

If using wooden skewers, ensure they are soaked in water for at least 30 minutes before grilling to prevent burning.
