Equipment

  • 1 Grill
  • 4 Skewers (wooden or metal)
  • 1 Cutting board
  • 1 Bowl for marinating
  • 1 Basting brush

Ingredients
  

  • 1 medium zucchini, sliced into rounds (about 1 cup)
  • 1 cup bell pepper (any color), cut into 1-inch pieces
  • 1 cup cherry tomatoes
  • 1 red onion, cut into wedges
  • 8 ounces mushrooms, cleaned and halved
  • 4 tablespoons olive oil
  • 2 teaspoons Italian seasoning
  • to taste salt
  • to taste pepper
  • as needed fresh basil for garnish (optional)

Instructions
 

  • Preheat the grill to medium-high heat.
  • If using wooden skewers, soak them in water for about 10 minutes to prevent burning.
  • In a large bowl, combine the zucchini, bell pepper, cherry tomatoes, red onion, and mushrooms.
  • Drizzle the olive oil over the vegetables, then sprinkle with Italian seasoning, salt, and pepper. Toss to make sure all the veggies are coated.
  • Thread the marinated vegetables onto the skewers, alternating between the different vegetables for color and variety.
  • Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally until the veggies are tender and slightly charred.
  • Remove the skewers from the grill and let them cool for a minute.
  • Garnish with fresh basil, if desired, and serve warm.

Notes

Feel free to customize the skewers with your favorite vegetables or add proteins such as tofu or shrimp for a heartier dish.
You can also brush the skewers with your favorite barbecue sauce during the last few minutes of grilling for added flavor.
