- 2 medium eggplants About 1.5 lbs total.
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried oregano
- 1 tablespoon balsamic vinegar Optional.
Preheat the grill to medium-high heat.
Wash the eggplants and cut them into 1/2-inch thick slices.
In a mixing bowl, combine the olive oil, minced garlic, salt, black pepper, and dried oregano. Mix well.
Brush both sides of the eggplant slices with the oil mixture until well coated.
