Ingredients
  

  • 1/2 cup olive oil
  • 1/4 cup soy sauce
  • 1/4 cup lemon juice about 2 lemons
  • 2 tablespoons honey
  • 4 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes optional
  • 4 boneless skinless chicken breasts chicken breasts approximately 1.5 lb

Instructions
 

  • In a mixing bowl, whisk together the olive oil, soy sauce, lemon juice, honey, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes (if using) until well combined.
  • Place the chicken breasts in a zip-top plastic bag or shallow dish. Pour the marinade over the chicken, ensuring all pieces are coated well.
  • Seal the bag or cover the dish and refrigerate for at least 1 hour, but preferably overnight for maximum flavor.
  • Preheat your grill or grill pan over medium-high heat.
  • Remove the chicken from the marinade and discard the leftover marinade.
  • Grill the chicken for about 6-8 minutes per side or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.
  • Once done, remove from the grill and let the chicken rest for about 5 minutes before slicing and serving.

Notes

For added flavor, consider marinating the chicken for up to 24 hours if time allows.
You can also use this marinade for other proteins like shrimp or tofu.
Serve with grilled vegetables or a fresh salad for a complete meal.
