Ingredients
  

  • 4 large artichokes
  • 1 piece lemon juiced
  • 4 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon smoked paprika optional
  • fresh parsley for garnish optional

Instructions
 

  • Fill a large pot with water and add the juice from one lemon. Trim the tops of the artichokes and remove the outer leaves until reaching the tender, lighter inner leaves. Cut the stems to about 1 inch in length.
  • Place the trimmed artichokes in the pot of lemon water and bring to a boil. Reduce the heat and simmer for about 15-20 minutes, or until the outer leaves can be pulled back easily.
  • In a mixing bowl, whisk together the olive oil, minced garlic, salt, black pepper, and smoked paprika if using to prepare the marinade.
  • While the artichokes are cooking, preheat your grill to medium heat.
  • Once the artichokes are tender, carefully remove them from the pot and drain them upside down to remove excess water.
  • Brush the marinade generously over the artichokes, ensuring it gets between the leaves.
  • Place the artichokes on the grill, stem side down, and grill for about 5-10 minutes until slightly charred and grill marks appear. Use tongs to rotate them for even grilling.
  • Remove the artichokes from the grill, let them cool slightly, and garnish with fresh parsley if desired. Serve warm with a dipping sauce or enjoy as is.

Notes

For added flavor, you can serve the grilled artichokes with a side of garlic aioli or a lemon-herb vinaigrette for dipping.
Be careful when handling artichokes as they can be hot after cooking. A pair of tongs is useful for flipping and removing them from the grill.
Artichokes can be cooked in advance and grilled before serving for a fresh and warm dish.
