Fill a large pot with water and add the juice from one lemon. Trim the tops of the artichokes and remove the outer leaves until reaching the tender, lighter inner leaves. Cut the stems to about 1 inch in length.
Place the trimmed artichokes in the pot of lemon water and bring to a boil. Reduce the heat and simmer for about 15-20 minutes, or until the outer leaves can be pulled back easily.
In a mixing bowl, whisk together the olive oil, minced garlic, salt, black pepper, and smoked paprika if using to prepare the marinade.
While the artichokes are cooking, preheat your grill to medium heat.
Once the artichokes are tender, carefully remove them from the pot and drain them upside down to remove excess water.
Brush the marinade generously over the artichokes, ensuring it gets between the leaves.
Place the artichokes on the grill, stem side down, and grill for about 5-10 minutes until slightly charred and grill marks appear. Use tongs to rotate them for even grilling.
Remove the artichokes from the grill, let them cool slightly, and garnish with fresh parsley if desired. Serve warm with a dipping sauce or enjoy as is.
