Craving a meatless option? This Greek Lentil Salad is made with creamy feta and tossed in a delicious lemon honey dressing. It's super easy to make and infused with mouthwatering Mediterranean flavors. Make up a batch in advance for a healthy lunch or dinner throughout the week.   • 2 19 oz cans Lentils drained and rinsed
  • 1 Cucumber halved and sliced
  • 1 pint Cherry tomatoes halved
  • 1/4 medium Red onion diced
  • 1 cup Feta cheese crumbled
  • 2 cups Fresh parsley finely chopped
  • 2/3 cup Extra virgin olive oil
  • Juice of 1 Lemon fresh squeezed
  • 1 teaspoon Honey
  • 1 clove Garlic minced
  • 1/2 teaspoon Salt

  • Toss all salad ingredients (lentils, cucumber, tomatoes, onion, feta, parsley) in a large bowl.
  • In a smaller bowl, whisk olive oil, lemon juice, honey, and garlic to make dressing.
  • Pour dressing over salad and toss gently to combine.
  • Sprinkle salt over salad, adjust seasoning to taste.
  • Let salad sit for at least 10 minutes before serving to enhance flavor.

Notes

For optimal taste, allow to sit in fridge for at least half an hour to allow flavours to come together. If you’d prefer to cook the lentils from scratch as opposed to using canned, use about 4 cups cooked green or brown lentils. Serve with pita chips if desired.
