Ingredients
  

  • 4 pieces boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 2 pieces lemons juiced and zested
  • 5 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley chopped, for garnish

Instructions
 

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and black pepper. Whisk together until well blended.
  • Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl and let the chicken marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).
  • Lightly grease a baking dish with a bit of olive oil. Place the marinated chicken breasts into the dish, pouring any remaining marinade over the top.
  • Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) using a meat thermometer.
  • Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.

Notes

For added flavor, you can include sliced olives or feta cheese as toppings.
This dish can be paired beautifully with roasted vegetables or a light salad.
