- 1 pound chicken breast, cut into 1-inch cubes
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup grated Parmesan cheese
- Juice of 1 lemon lemon
- to taste Fresh parsley (for garnish, optional)
In a mixing bowl, combine olive oil, minced garlic, dried Italian herbs, salt, pepper, grated Parmesan cheese, and lemon juice.
Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover the bowl and marinate in the refrigerator for at least 15 minutes.
If using wooden skewers, soak them in water for 10 minutes to prevent burning.
Preheat the grill to medium-high heat. If using a grill pan, heat it over medium heat.
Thread the marinated chicken onto the skewers, leaving a little space between each piece.
Place the skewers on the grill and cook for about 15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Remove from the grill and let rest for a couple of minutes. Optionally, you can brush with any remaining marinade for added flavor.
Garnish with fresh parsley if desired and serve immediately.
For added flavor, you can include vegetables such as bell peppers or onions on the skewers.
These skewers can be served with a side of salad or your favorite dipping sauce.
To make this recipe quicker, you can use pre-cooked chicken, cooking it just until it is heated through.
