Ingredients
  

  • 4 cups cooked rice Preferably day-old.
  • 2 tablespoons vegetable oil
  • 1 cup diced carrots About 2 medium carrots.
  • 1 cup frozen peas
  • 4 pieces green onions Chopped.
  • 2 cloves garlic Minced.
  • 2 large eggs
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce Optional.
  • salt and pepper To taste.
  • 1 cup cooked protein Chicken, shrimp, or tofu, diced (optional).

Instructions
 

  • Begin by preparing all your ingredients. Make sure the rice is separated and not clumpy. Chop the carrots, green onions, and garlic. If using, dice your cooked protein as well.
  • Heat the vegetable oil in a large frying pan or wok over medium-high heat.
  • Add the minced garlic and diced carrots to the pan. Sauté for about 2-3 minutes until the carrots are tender.
  • If using cooked protein, add it to the pan and stir-fry for an additional 2 minutes.
  • Push the cooked vegetables and protein to one side of the pan. Crack the eggs into the empty space and scramble them until fully cooked, then mix everything together.
  • Add the cooked rice to the pan, breaking up any clumps. Stir everything together, allowing the rice to mix well with the vegetables and eggs.
  • Pour the soy sauce and oyster sauce (if using) over the rice mixture. Stir to combine evenly. Season with salt and pepper to taste, cooking for another 2-3 minutes until heated through.
  • Finally, mix in the frozen peas and chopped green onions. Cook for an additional 1-2 minutes until the peas are heated.
  • Serve hot and enjoy your delicious fried rice!

Notes

For a vegetarian option, skip the protein and add extra vegetables like bell peppers or broccoli.
You can customize this recipe by adding your favorite vegetables or sauces.
This meal is best served immediately but can be stored in the refrigerator for up to 3 days. Reheat thoroughly before serving again.
