Preheat the oven to 350°F (175°C).
In a mixing bowl, combine the sliced strawberries, 1 cup of sugar, lemon juice, and cornstarch. Stir gently until the strawberries are well-coated. Set aside to macerate for 10 minutes.
In a separate bowl, whisk together the flour, baking powder, salt, and 1/4 cup sugar.
Pour in the milk, melted butter, and vanilla extract into the dry ingredients. Mix until just combined; do not overmix.
In the prepared 9x13 inch baking dish, spread the strawberry mixture evenly across the bottom.
Spoon the batter over the top of the strawberries, spreading it as evenly as possible.
Bake in the preheated oven for about 45 minutes, or until the top is golden brown and a toothpick inserted into the batter comes out clean.
Let the cobbler cool for at least 10 minutes before serving.
Serve with whipped cream or a scoop of vanilla ice cream for extra indulgence.
