Slice cucumbers, peppers, and onions into thin strips for tenderness.
Toss sliced veggies in a big bowl with salt and mix well.
Let the bowl sit for about 30 minutes to let moisture escape.
In a saucepan, combine vinegar, sugar, celery seed, and mustard seed. Heat gently until sugar dissolves.
Remove from heat and allow to cool slightly.
Pour the pickling liquid over the vegetable mixture and stir to combine.
Cover and refrigerate for a minimum of 4 hours, preferably overnight.
Notes
The fresh pickled cucumber salad is best served chilled. Experiment with different vinegars or spices for variation.
