- 2 cups ripe peaches, diced About 2 large peaches.
- 1/2 cup red onion, finely chopped About 1 small red onion.
- 1 medium jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 unit lime, juice Juice of 1 lime.
- 1 unit lime, zest Optional.

Begin by washing the peaches thoroughly. Cut them in half, remove the pits, and dice the flesh into small pieces. Place the diced peaches in a mixing bowl.
Finely chop the red onion and add it to the bowl with the peaches.
Seed the jalapeño for a milder salsa (or keep some seeds for added heat), then mince it finely. Add it to the bowl.
Chop the fresh cilantro and add it to the mixture.
Squeeze the juice of one lime over the ingredients in the bowl. If using lime zest, add it at this time as well.
